Huehuetenango is a beautiful region known for rugged landscapes and high elevation. Marked by Mayan ruins and enormous mountain ranges, the extreme remoteness of Huehuetenango requires that nearly all producers process their own coffee. An abundance of rivers allows each village to set up mills for its community of farmers, which led us to this extraordinary group.

Ixlama is a coffee born out of collaboration. It is the culmination of work by over 100 family producers in the Guatemalan municipalities of San Pedro Necta and La Libertad in Huehuetenango. The region’s geographic conditions help to create exceptional coffees with a distinct acidity and fruity flavors.

The crop, consisting of half Bourbon and half Caturra varietals, is shade grown and then sorted and milled at Transcafe’s mill at Caserio Teogal Adea San Martin. The mill uses “guardiolas”, a coffee dryer patented by a Guatemalan resident in 1872, after coffees are sun-dried on cement patios.
